Italian Coffee Cream

Do you love coffee as much as I do? If so, this light refreshing espresso is for you. It’s getting quite hot where I live in Texas and a nice cool, creamy espresso hits the spot on our warm days. Coffee cream is easy to make with just three simple ingredients. Espresso, sugar, and heavy cream come together to create an airy, sweet treat.

Crema al caffè a.k.a. coffee cream was birthed in Naples during the hot summer months as a cool coffee option to hot espresso. Thank you Italy, once again, for giving the world so many wonderful recipes. As you indulge in this delicious coffee treat just imagine you are in Italy on a gorgeous summer day. Bellissimo!

Italian Coffee Cream

Yield: 4 servings

Ingredients

⅓ cup espresso coffee

3 tablespoons granulated sugar

1 ¼ cup heavy cream

Optional garnish:

Cocoa powder

Chocolate covered coffee beans

Instructions 

  1. Brew espresso coffee or very strong coffee.
  2. Add sugar to hot coffee and stir until dissolved.
  3. Leave coffee in the refrigerator until it’s cold.
  4. In a stand mixer, or use a hand mixer, whip heavy cream on medium high speed for several minutes until the cream is light and fluffy but not stiff. 
  5. Slowly add the cold espresso/sugar mixture to the whipped cream while the mixer is running until well combined. 
  6. Keep coffee cream in the refrigerator for at least an hour before serving in individual cups.
  7. Dust each serving with cocoa powder and for fun add a chocolate covered coffee bean. Enjoy!

Lemonade

Fresh squeezed lemonade on a hot summer day is so refreshing. With a little effort you can have a cool glass of ice cold deliciousness. It’s not difficult to make homemade lemonade, and you may become addicted, like me. With some lemons, sugar, and water you’ve got sweet, tart, goodness in a glass.

Right now groceries are quite expensive, so that means lemons aren’t exactly cheap. Homemade lemonade would be a treat, but worth it, in my opinion. I completely understand if you don’t want to spend the extra money. However, for a few extra dollars, you will be happy with your purchase. I’m just giving you the simple recipe and it’s on you whether or not you decide to give it a try. I really hope you do!

Lemonade

equipment needed:

potato masher

citrus juicer and or citrus press

strainer

Yield: 2.25 quarts

Ingredients

12 medium sized lemons (10 lemons for 2 cups of juice and 2 lemons sliced)

1 1/2 cups sugar

7 cups water

Instructions

  1. Thinly slice 2 lemons and remove the seeds. Place one of the sliced lemons in a large mixing bowl. Add 1 1/2 cups of sugar. Mash the lemon and sugar together until the sugar is wet.
  2. Juice 10 lemons to get 2 cups of lemon juice. Pour the fresh squeezed lemon juice into the bowl with the mashed lemon and sugar. Add the 7 cups of water. Whisk together until the sugar is dissolved.
  3. Place a strainer over a large bowl, or the pitcher you will use, and pour the lemon/sugar/water mixture through the strainer.
  4. Add remaining lemon slices to the pitcher and enjoy!

Notes:

  • Don’t worry about seeds when you juice the lemons since everything will go through the strainer.
  • I strain the lemon mixture into a separate bowl before pouring it into a pitcher because I have spilled it when straining it directly into a pitcher.

Mock Mojitos

There is nothing quite like a cool drink on a hot summer day. Sometimes, plain old water is not enough. You want something special every now and then to quench your thirst. This mojito does the trick without any alcohol. It’s crisp, sweet, and slightly bitter. 

You don’t need any fancy equipment or bartender tools to make this delicious mocktail. It comes together quickly. The only time consuming part is squeezing the limes, but so worth the effort. I prefer fresh lime juice over bottled. But by all means, use bottled juice if that’s your groove. 

Mint leaves add tartness while the basil brings some sweetness to balance out the mojitos. There’s nothing better than adding fresh ingredients to any recipe. If you’re like me, you’ve got plenty of herbs growing in your yard. If not, they are easy to find at your local grocery store.

I suggest using flavored sparkling water to sweeten the mojitos if you’re making these for kids. The sourness may be too much for some children. This delightful drink would be lovely for dinner guests at a barbeque, or pool party. Surprise your family with this refreshing non-alcoholic treat, just because.

Mock Mojitos

 

¼ cup mint leaves

¼ cup basil leaves

½ sugar

¾ cup fresh squeezed lime juice

1 liter sparkling water

ice

For garnish: lime wheels & mint sprigs

 

  1. In a medium pitcher add mint, basil, and sugar. 
  2. Using a wooden spoon, mash until the herbs are fragrant.
  3. Add lime juice and stir until the sugar dissolves.
  4. Top with sparkling water.
  5. Pour into four ice filled glasses.
  6. Garnish with lime wheels and mint sprigs.
